Mercato Centrale Brings ‘Food Tourism’ to SM Mall of Asia this July

After  Cocina Centrale grand launch last Saturday,  here comes  Fiesta Bahia,  the latest brainchild of t he Mercato Centrale Group to open this July.

Did you know that one of top tourist destinations in Manila is the SM Mall of Asia (MOA)? And what’s one of the best ways to welcome foreign guests to one of Manila’s top tourist destinations? By sharing with them a variety of great-tasting dishes from different parts of the Philippines!

That’s why the Mercato Centrale group, the organizers of Metro Manila’s premier night food and lifestyle markets, is bringing a new ‘food destination’ experience to the SM Mall of Asia By the Bay with Fiesta Bahia – ‘the food tourism’ market – every Friday, Saturday and Sunday starting July 12 (Friday) from 4pm to 3am.

“In an interview with Today Show food blog, Bizarre Foods host Andrew Zimmen predicted that Filipino will be the next big thing. Chef and culinary expert Anthony Bourdain of “No Reservations” also shared in his blog on the Travel Channel website that he enjoyed sisig and Cebu lechon during his visit to the country.” said Anton Diaz, co-founder of Mercato Centrale and the popular food and travel blogger behind

“As our tourism industry continues to boom, I’m sure many foreigners, balikbayans and even locals would like to sample the richness of our Filipino cuisine. That’s what Fiesta Bahia is all about – a food market where you can enjoy popular dishes from the different regions all in one place!” Anton added. “Aside from that, they can enjoy the popular gourmet and artisanal food from our suki Mercato Centrale vendors.”

“Our location along SM By the Bay is also a great place to bring tourists, friends and family!” shared Vanessa Ledesma, co-organizer of Fiesta Bahia. “They can take in the beauty of the Manila Bay shoreline, enjoy the weekend fireworks, and listen to live acoustic music while enjoying a great salo-salo meal.”

“We’re actively looking for food entrepreneurs who specialize in provincial cuisines from all around the Philippines.” Said Rache Diaz, co-organizer of Fiesta Bahia. “If you’ve got a great homemade dish from your hometown, we would love for you to share a taste of your own local culture with foodies from around Manila and the rest of the world!”

Mercato’s Cocina Centrale in Pampanga

The Mercato Centrale Group, organizer of the popular night food markets in Metro Manila  formally launched  Cocina Centrale  yesterday at the Marquee Park of Ayala’s Marquee Mall  in Angeles City, Pampanga.  It will  be open every Friday and Saturday starting July 5 from 4pm to 3am.

Despite the inclement weather  in some provinces of  Central Luzon including Pampanga and Manila during the opening,  food enthusiasts and  foodies in nearby provinces unite for the launch  of  night market.   I tagged along my two children who are  food lovers and they experienced too, great and unique food at the the food capital of the Philippines, Pampanga.

“This is our first food market outside of  Metro Manila, and we felt the most ideal place where we could share the Mercato Centrale experience was with the foodies of Pampanga. The great tradition of cooking in this part of the country means that we have to  ‘level up’ when it comes to the quality of our gourmet and artisinal vendors, so that the food satisfies the discerning taste buds of Kapampangans,” said RJ Ledesma, co-founder of the Mercato Centrale Group.

Cocina Centrale will be a culinary showdown where an eclectic mix of food entrepreneurs from both Manila and Pampanga offer great-tasting home-cooked food and delicacies.

“For Pampaguenos, they will get to sample the popular and best-selling food vendors from the Mercato Centrale markets in Manila.  Meanwhile, Manilenos will get to try out the best dishes that Pampanga and the other Northern provinces have to offer.  And the  winner will be our waistlines!,  added Ledesma.

The success of Mercato-managed markets in Manila have proudly come from Kapampangan chefs whose dishes have been huge crowd drawers, like Chef Sau del Rosario’s Paella from Villa Cafe and Chef Claude Tayag’s Pan de Bagnet from Bale Dutung.

“We look forward to surfacing a lot of unique, innovative and great-tasting dishes from Pampagueno food entrepreneurs whom we would like to invite to eventually join our Manila-based markets. The Mercato Centrale experience here will be both uniquely Mercato and uniquely Pampanga at the same time, ” said Ledesma.

The founders were inspired by the vibrant night food markets of Asian neighbors Singapore, Thailand, Hongkong and Taiwan. They are not only destination markets but tourists attractions as well. They wanted to bring that exciting ‘street food’ vibe and culture to the Philippines, and give it a uniquely Pinoy spin.

All food vendors undergo a taste test by the Mercato Centrale Group. Vendors are chosen based on flavour, innovation and uniqueness.

“We’re proud to have helped a number of our food vendors create their own niche in the local food industry. Among those  who have emerged are Manang’s Chicken, Mochiko, Chuck’s Grubberie, Mio Gelati, Spring by Ha Yuan, Merry Moo, Inutak. Zen Taclings, Eat My Garlic Fries and a lot more,”  added Ledesma.

For those interested to become food vendors of any Mercato Centrale Group’s food markets,  please email, or text (+63)9178401152.
