FTF #95: Soup for Rainy Days

The flood is rising up  every minute. The sky  still grey and gets even darker. The supplies in the pantry are almost empty and the food in the fridge could supply us only for about two meals.  Today is supposed to be my supermarket-day to replenish goods. I couldn’t go outside because I just had my mani/pedi service yesterday and drowning my feet in the flood would mean risking myself into a Leptospirosis disease. We settled for whatever is left in the kitchen. There’s pasta and sauce but I have no meat except for some canned tuna.

My entry would be soup that we had the other day. Soup and other easy to digest food are a usual treat these days for my little one who can’t eat well because of her braces.

Food Trip Friday #63: Macaroni Soup

We all want a comfort food on the table during cold or rainy season. It always gives us some warmth during this kind of weather. Typhoon Pedring was still pounding Manila that day while I was preparing this. I had some of the ingredients available in my bin and only bought a can of evaporated milk for this creamy soup.


2 tablespoons oil (or butter)
2 cloves garlic (finely chopped)
1 medium onion (chopped)
2 chicken breast fillets (chopped)
1 medium sized carrots (chopped)
3 celery stalks (chopped) optional
1 small can evaporated milk
1 chicken bouillon cube
2 liters water
elbow macaroni
salt and pepper to taste
grated cheese (optional)
1/4 cabbage


In a big pot, heat oil or butter and toast garlic until golden. Sauté the chopped onion. Add chopped chicken and continue cooking until tender. Add the carrots. Stir up for a few minutes.
Add water or chicken stock or broth, milk, and chicken cube in the pot and let boil. Add pre-cooked macaroni. Add a salt, pepper, the toasted garlic and the finely chopped celery leaves (optional) to the soup and simmer for a few minutes. I put cabbage instead of celery. Serve in a bowl.
You can add grated cheese and celery leaves if you wish or just according to your taste.
BTW, I put some bits of hotdog  as  the all time favorite ingredients of my kids.
