Food Trip Friday 49: Chicken Macaroni Salad

My MIL celebrated her birthday here last week and I prepared salad which all of us craved for the past few weeks. Now, I am craving again. I am sharing here the recipe that I got according to my taste and the approval of my taste testers, my kids.

Chicken Macaroni Salad Recipe
Macaroni Salad 1/2 kilo macaroni noodles
1 pc medium sized carrots
1 big chicken breast
800 ml of mayonnaise
2 medium cans pineapple chunks or tidbits
1 big white onion, finely chopped
1 cup sweet pickle relish
1 cup diced cheddar cheese
1/2 cup raisins
salt and pepper to taste


Cook macaroni noodles for about 12 minutes  or  check the  package for cooking instructions.   Remember not to overcook the noodles. Dice the carrots.  Bring the chicken breast  to boil breast.  Drain chicken breast,  then shred.   Drain pineapple chunks or tidbits.

Prepare a big bowl so you can mix well  the salad. Combine all ingredients while adding salt and pepper to taste. Refrigerate and serve.
