Food Trip Friday #63: Macaroni Soup

We all want a comfort food on the table during cold or rainy season. It always gives us some warmth during this kind of weather. Typhoon Pedring was still pounding Manila that day while I was preparing this. I had some of the ingredients available in my bin and only bought a can of evaporated milk for this creamy soup.


2 tablespoons oil (or butter)
2 cloves garlic (finely chopped)
1 medium onion (chopped)
2 chicken breast fillets (chopped)
1 medium sized carrots (chopped)
3 celery stalks (chopped) optional
1 small can evaporated milk
1 chicken bouillon cube
2 liters water
elbow macaroni
salt and pepper to taste
grated cheese (optional)
1/4 cabbage


In a big pot, heat oil or butter and toast garlic until golden. Sauté the chopped onion. Add chopped chicken and continue cooking until tender. Add the carrots. Stir up for a few minutes.
Add water or chicken stock or broth, milk, and chicken cube in the pot and let boil. Add pre-cooked macaroni. Add a salt, pepper, the toasted garlic and the finely chopped celery leaves (optional) to the soup and simmer for a few minutes. I put cabbage instead of celery. Serve in a bowl.
You can add grated cheese and celery leaves if you wish or just according to your taste.
BTW, I put some bits of hotdog  as  the all time favorite ingredients of my kids.
