My two daughters always include pasta in our groceries and would always pick the ingredients to go with our favorite recipe. I cook pasta, if not often, at least when we crave for quick snack and for their after school merienda.
Here’s my easy recipe of Pesto Pasta.
1 onion chopped
2 1/2 tablespoons pesto
2 tablespoons or butter
Grated Parmesan cheese
500 g of pasta
In a bowl, cook pasta until tender. Follow the instructions at your selected brand. It usually takes 11 to 14 minutes. Make sure your pasta is Al dente. Firm but not hard. Drain, set aside. Heat the butter and saute garlic, onion and mushroom. Add pesto, all purpose cream, seasonings, salt and pepper. Cook for about five minutes and it’s done. Mix the sauce with pasta and serve with Parmesan cheese.
